A simple, quick, flavorful vegetarian broth.
Ingredients:
1 small onion
2 leek stalk (the green part)
1 carrot
2 garlic cloves, each sliced in half
1 Tablespoons olive oil
1 1/2 teaspoon salt
8 cups water
1 bay leaf
Chop your onion, leek stalks, and carrots roughly into 1" pieces.
In a medium pot sauté the vegetables in olive oil until they start to soften.
Add the water, salt, and bay leaf. Bring to a boil and then lower to a simmer.
Cook for thirty minutes. Cool, strain, and store.
