Faloodeh

The sweetness in this dessert is tempered by the lime and dried fruit.

If you use all the garnishes it makes a super pretty dessert.


Ingredients:

1 cup sugar

1 cup water

1 tablespoon rose water

2 ounce dried rice sticks or vermicelli

fresh lime juice or lime wedges


Garnishes:

dried sour cherries or mulberries

pistachios

dried rose petals


Combine the sugar and water in a small saucepan and simmer over medium heat until the sugar is dissolved. Remove the syrup from heat and stir in the rose water. Let the syrup cool completely.


Place the noodles in a heatproof bowl and add enough boiling water to cover them. Let the noodles stand in the water for five minutes or until soft. Drain them and then rinse them under cold water. Cut or tear the noodles into two-inch pieces.


Combine the noodles and syrup in a shallow glass or metal baking dish. Place in the freezer.

After one hour, remove the pan from the freezer and stir the noodles with a fork. Return the pan to the freezer for another hour, then rake the noodles again with a fork. Put them back in the freezer until a granita like consistency is reached, about 2 more hours.


To serve, rake with a fork and scoop into bowls. Serve with fresh lime juice or lime wedges, sour cherries, pistachios, and rose petals.
