Socca is a super simple and delicious savory pancake made with chickpea flour. It is also known as farinata, faina, and panisse depending where you are. I love that chickpea flour is gluten free, high in protein, and makes a super delicious earthy bready receptacle that can be topped with many things. Sometimes I like having one for lunch with sautéed greens and a fried egg. Other times I cut the pancake into wedges and have it with a salad. This recipe is easily multiplied. As it is written below it makes 2 pancakes.
