Butter Lettuce, Radishes,Coconut Vinaigrette


For the salad:


5 Butter Lettuce leaves per person

1 Radish per person

2 Tablespoons plain, unsweetened Coconut Yogurt

2 Tablespoons Olive Oil

1/8 teaspoon Salt

1 Tablespoon Lemon juice


Wash and dry the lettuce leaves.

Carefully shave the radishes in a mandoline.

Tuck them between the lettuce leaves and scatter them on top.


Whisk the oil, yogurt, salt and lemon juice together. Thin with a little water if necessary.

Drizzle on top.
