Arroz con Dulce is Puerto Rico's rice pudding. It's made with lots of spices and coconut milk. To me it is rice pudding perfection. There is controversy around whether to put rum soaked raisins in this dessert. Some love it, others don't. While I love a boozy dessert I don't find them necessary in this one. You can add them if that sounds appealing. Rum soaked raisins are delicious, but if you have some rice pudding leftover without the raisins you can warm it with a little milk in the morning. It makes for a really cozy breakfast
Ingredients:
1 cup medium grain rice
2 cups water
1 can unsweetened coconut milk
1/2 cup honey
6 cloves
1 star anise
1 bay leaf
1 cinnamon stick
1 teaspoon salt
Put your rice in a bowl and cover it with water. Let it rest for about three hours.
Once it's soaked drain it, put it in a medium pot, add two cups of water, and bring it to a boil. Once it starts to boil turn your heat down to medium low and stir. Add the honey, spices, and salt and stir again. Once the water has almost all completely absorbed add the coconut milk and stir. Cook for about 10-15. more minutes until the rice is tender. Stir it every once in a while to ensure the rice doesn't stick to the bottom of the pan.
Pour into a medium sized serving dish and let it cool. If you want it cold, once it has come to room temperature put it in the fridge for about 30 minutes.
