Quick Preserved Lemons

🍋 A favorite non-recipe recipe 🍋

-Thinly (and very carefully) slice and organic lemon with a mandolin.

-Mix 1 cup each kosher salt and sugar

-Place the lemon slices in a small bowl

-Pour the salt and sugar mix on top.

- Toss everything together but make sure the salt and sugar cover the lemons completely.

-Add a little more if not.

-Cover and store in your refrigerator for a few days. (1-3 should suffice)

-Rinse the lemons in lemon water.

-Place in a jar and cover with oil.

I like to chop the lemon slices and add them to everything. Over time the oil gets flavored with the lemon as well. The uses of both are endless.

One of my all time favorites is a pantry spaghetti with tuna, caramelized onions, the chopped lemons, and a sprinkling of chopped pistachios.The oil and lemon are also great on little boiled potatoes.
